Dairy Free French Toast

This may not be the healthiest of our Sunday brunches in bed, but it’s definitely a healthier take on a classic! I use sprouted bread for the base, but my personal favorite is sourdough. It’s full of fiber and nutrients, making it a more wholesome option compared to regular bread. Plus, the tangy flavor of the sourdough adds a delicious depth to the French toast. I keep it lighter by using almond milk and a touch of cinnamon, with natural sweeteners like pure maple syrup or honey instead of sugary alternatives. It’s the perfect balance of indulgence and nourishment to kick off a relaxing Sunday! Feel free to top it with fresh berries.


It’s super easy to whip up! Start by grabbing a bowl and cracking in an egg. If you’re going vegan, just skip the egg and use a banana instead. I like to use Almond Breeze unsweetened vanilla almond milk instead of regular milk. Then, I add carob, cinnamon, and a splash of pure vanilla extract. For an extra kick, I also tossed in some peanut powder this time.



I also cook with Earth Balance for a buttery alternative. I cut dairy out of my diet and this is a perfect substitute.

When it comes to sweeteners, I highly recommend using 100% pure maple syrup or honey. Never settle for the fake stuff! Most “pancake syrup” is just high fructose corn syrup—yuck! It’s worth spending a few extra bucks. Trust me, your body (and taste buds) will thank you.

Oh, and I couldn’t resist making a smoothie to go with it! I blended up a banana, cherries, carob, flax seeds, chia seeds, cinnamon, almond milk, and a handful of ice. Now, go ahead and get back in bed to enjoy the deliciousness!
